EAT: Summer Recipes

SUMMER RECIPES
The summer recipes will focus on groups:
1. Micro-greens (flavour profiles and how they can be used)
- Sweet (pea shoots)
- Spicy, sharp, bitter (radish, mustard, fenugreek, arugula)
- Grassy (bok choy, amaranth)
2. Summer Vegetables
- Okra
- Pumpkin
- Ash gourd
- Zucchini
- Tomato
- Brinjal
- Beans
- Peppers
- Beetroot
3. Leafy greens
- Morning glory
- Amaranth
- Malabar spinach
Using these we will make:
- An appetizer platter
- Soup
- 2 kinds of Buddha bowls
- Moroccan stew
