EAT: Summer Recipes

SUMMER RECIPES

The summer recipes will focus on groups:

1. Micro-greens (flavour profiles and how they can be used)

  • Sweet (pea shoots)
  • Spicy, sharp, bitter (radish, mustard, fenugreek, arugula)
  • Grassy (bok choy, amaranth)

2. Summer Vegetables

  • Okra
  • Pumpkin
  • Ash gourd
  • Zucchini
  • Tomato
  • Brinjal
  • Beans 
  • Peppers
  • Beetroot

3. Leafy greens

  • Morning glory
  • Amaranth
  • Malabar spinach

Using these we will make: 

  • An appetizer platter 
  • Soup
  • 2 kinds of Buddha bowls
  • Moroccan stew
